Chicken Parm

I just LOVE this recipe. There are several steps, but I will tell you how to make it less time consuming :)



Ingredients
    * Oven friend Chicken breast ( Recipe below)
    * 3 TBSPs Grandmas tomato sauce ( recipe below)
    * 2 TBSP Shredded mozzarella cheese
    * 2 TBSP Shredded Parmesan Cheese
Directions
   1. Preheat oven to 350
   2. add chicken to baking dish
   3. Top with Tomato sauce and cheese
  4. Cover in aluminum foil, bake for 15-20 minutes or until cheese is bubbly and chicken is heated through.


So what I do is make the tomato sauce on a weekend since it takes a little longer and then I make the chicken the night I am going to be making the Chicken Parm so it does not take as long. You could also make the chicken ahead of time and then put it all together and just follow the above instructions :)


Oven Fried Chicken
 --- Ingredients
      * 2 TBSP Pine Nuts
      * 1 TBSP Cornmeal
      * 1/2 TSP Onion Powder
      * 1/2 TSP Ground Paprika
      * 1/2 TSP Garlic Powder
      * 1/2 TSP Ground black pepper
      * 1/4 TSP Ground Cayenne Pepper
      * 1/2 TSP Dried Oregano Leaves
      * 1/2 TSP Dried Thyme leaves
      * 1/4 TSP Sea Salt
      * 1/2 TSP Baking Powder
      * 1/4 Cup Almond flour
      * 1/4 Cup Coconut Flour
      * 2 TBSP grated Parmesan Cheese
       * 1/2 Cup low fat buttermilk
      * 1 Large egg white ( 2 TBSP)
      * 4 (4 OZ) Chicken Breasts ( boneless, skinless)
      * 1 TBSP Olive Oil

--- Directions
    1. Preheat oven to 425 degrees F
    2. Pulse pine nuts and cornmeal in food processor until finely ground
    3. Combine Pine nut mixture, onion powder, ground paprika, garlic powder, ground black pepper, ground cayenne pepper, dried oregano leaves, dried Thyme leaves, salt, baking powder, almond & coconut flour, and cheese in shallow dish. mix well.
   4. In seperate shallow dish, combine buttermilk and egg whites. Whisk to blend.
   5. Dip each piece of chicken in buttermilk mixture; then into pine nut mixture until evenly coated.
  6. Heat oil in large skillet over medium-high heat.
  7. Add chicken breasts, cook for 3 to 4 minutes on each side
  8. Put in oven for 10 minutes

Tomato Sauce
  --- Ingredients
      * 2 TBSP Olive Oil
      * 1 Medium onion, chopped
      * 4 Cloves garlic, finely chopped
      * 1 ( 6 OZ) Can tomato paste, no salt added
      * 1/2 Cup Red Wine
      * 2 Cans ( 28 oz each) diced tomatoes
      * 2 TBSP Agave nectar
     * 1 TSP Sea Salt
     * 1/4 TSP ground black pepper
     * 1 (3 oz) Parmesan cheese rind
     * 3 TBSP finely chopped basil

---- Directions
    1. Heat olive oil in large saucepan over medium heat
     2. Add onion, cook, stir frequently for 5-6 minutes or until onion is translucent
    3. Add garlic and tomato paste, stir constantly for 2-3 minutes. Don't burn it!!
    4. Add wine, Cook. Sir constantly for 2-3 minutes
   5. Add Tomatoes, agave, salt and pepper. Bring to a boil stir frequently. reduce heat to low; stir for 3 minutes.
   6. Add cheese rind, cook. Stir occasionally for 1 hour
   7. Add Basil, mix well.
