Spinach, Tomato, Mozzarella Pasta Salad






Ingredients:
 * 2 1/2 Cups uncooked multi-grain or whole grain pasta ( 7 1/2 OZ)
 * 2 Cups of Grape Tomatoes
 * 1/3 Cup of Italian Dressing
 *1 Bag (6 oz) fresh baby spinach leaves
 * 4 OZ fresh Mozzarella cheese, cut into cubes

Directions:
 1. Cook Pasta as directed on package -- DO NOT add salt or oil; drain. Rinse with cold water to cool; drain.
2.  In a large bowl, toss tomatoes and dressing. Add Spinach and cooked pasta; toss well. Top with cheese cubes!

This is super easy to make and so yummy. I make all of this and then just portion it out for lunches for the week. It can also be a dinner dish!
