Lemon-Basil Mahi Mahi

I have never been a huge fan of fish, but my husband is -- so I have been looking for recipes that I can enjoy. I found this one and we have this a couple times a month, and it is so easy and quick!


Ingredients:
* 4 6-8 Ounce Mahi Mahi Filets
* 1 1/2 TSP Fresh squeezed lemon juice
* 1 large garlic clove, finely chopped
* 3 Tablespoons of unsalted butter
* 1/4 TSP Salt
* 1/4 TSP Pepper
* 1 1/2 TBSP chopped Basil leaves
* 3 TBSP Olive Oil

Directions:
1. Combine butter, lemon juice, garlic, salt, pepper and basil in medium sauce pan over low heat. Stir until the butter melts. Cover. Keep Warm.
2. Heat olive oil in large skillet over medium heat. Season fish with salt and pepper, to taste. Cook fish for 3 minutes; then turn & cook until opaque.
3. Transfer fillets to individual plates. Spoon basil butter over fish. Serve.
4. In this particular meal i put it over quinoa and brown rice. They sell this in packets at Sam's club and you just make it in the microwave! But I have served the fish with veggies and other things before too - so you decide!
