Oven Baked Fajitas
I tried this recipe this week and I honestly think it will be a go to recipe in our household. We LOVE mexican food and I am always looking for a way to make it clean and simple... this is the BEST recipe I have found so far! Love that you just mix it all together and stick it in the oven. No more standing in front of the stove sauteing veggies anymore!
Ingredients:
Seasoning:
* 1 TBSP Chilli Powder
* 1/2 TBSP paprika
* 1/2 TSP onion powder
* 1/4 TSP garlic powder
* 1/4 TSP cumin
* 1/8 TSP cayenne pepper
* 1 TSP sugar
* 1/2 TSP Salt
* 1/2 TBSP corn Starch
Fajitas
* 2 Small ( or 1 Large) onion
* 3 Medium peppers ( you can use any color)
* 1 LB Chicken Breast
* 2 TBSP Vegetable Oil
* 1 Medium Lime
* Whole Wheat Tortillas
* 1/2 Cup of sour cream or greek yogurt ( Optional)
* 1/4 Bunch of Cilantro
Directions:
1. Preheat oven to 400 Degrees. Mix all of the ingredients for the fajita seasoning in a small bowl and set aside.
2. Cut the onion and bell peppers into 1/4 to 1/2 inch wide strips. Place them in a large 9x13 casserole dish. Slice the chicken breast into very thin strips and add it to the casserole dish with the vegetables.
3. Sprinkle the seasoning over the meat and vegetables. Drizzle the vegetable oil over everything. Use your hands to toss the ingredients until everything is well coated in oil and seasoning. Bake in the oven for 35-40 minutes, stirring once halfway through.
4. Squeeze the juice from half of the lime over the top of the meat and vegetables as it comes out of the oven.
5. Scoop a small amount of the mixture into the center of each tortilla. Top with a few sprigs of cilantro and sour cream ( optional) and an extra squeeze of lime if desired.
