Mexican Lasagna

This is one of my FAVORITE dinner recipes. It is so easy to make, and it is delicious! This is a great clean eating recipe if you LOVE Mexican like my husband and I. I also love making this and then taking it for lunch throughout the week.



Ingredients:
* 1 LB Ground Turkey
* 1 Cup Shredded Cheddar Cheese
* 1 Cup of Cottage Cheese
* 1 Cup of Clean Salsa
* 1/2 Cup of Black Beans (optional)
* 1 Small Onion, Chopped
* 1 TBSP of Taco Seasoning
* 4 Low Carb Whole Wheat Tortillas, cut into strips

Directions:
1. Preheat oven to 400 Degrees
2. In a skillet sprayed with non-stick spray, cook ground turkey and onion until brown. Once cooked, turn low, add salsa, black beans and taco seasoning, set aside.
3. In a bowl, combine cottage cheese and 3/4 cup of the cheddar cheese.
4. in a baking dish, sprayed with nonstick spray, line the pan with 1/2 of the tortilla strips. Scoop 1/2 the meat mixture onto the tortillas and spread out, covering the tortillas. Then add 1/2 the cheese mixture on top of the meat and spread out. Repeat until strips and mixtures are gone. Top it all with the remaining cheese.
5. Cover and bake for 40 minutes, ENJOY!
