Chicken CheeseSteak Sandwiches

These are an absolute favorite in our house. And for those of you looking for healthy food your husband or the man in your life approves of: this is it!! And they are so easy to make!



Ingredients:
* 1 Whole-Wheat Hot Dog Bun
* 4oz Boneless, Skinless Chicken Breast
* Olive Oil Cooking Spray
*1/2 Cup of White Onion, Cut into Slivers
* 1 Green Pepper, Cut into Slivers
* Sea Salt & Black Pepper, to taste
* 1 Slice of reduced fat provolone cheese (or Shredded Cheese)
* 1 TBSP of low-sodium Ketchup
*1 TBSP  Hot Red Pepper rings, to taste (optional)

Instructions:
 1. Preheat Oven or Toaster Oven to 400 degrees F
2. Cut piece of aluminum foil a little larger than bun, wrap completely in foil
3. To shave chicken, hold knife at a 45 degree angle to cut slivers from breast, tearing it until shaved
4. Warm bun in oven for 10 Minutes
5. Set small nonstick pan over medium-high heat. When hot, mist with cooking spray. Add Onion and green pepper. Cook about 2-4 minutes, or until starting to brown. Remove from pan, and cover to keep hot. Return pan to high heat. Re-mist with cooking spray, add chicken. Season with salt and black pepper. As it cooks pull apart chicken with spatula or two wooden spoons to help with browning. Cook until no longer pink, about 2 minutes. Remove pan from heat. Add onions & green peppers and mix together.
6. Unwrap bun, careful not to burn yourself: the foil will be hot. Add Cheese followed by chicken and onion mix. Top with Ketchup and hot pepper rings if desired. Serve immediately.
